So today I made one of my favorite breakfast meals, the tofu scramble. This is a very simple dish that you can make using simply tofu, butter and salt, but if you want to spice it up, add a dash of pepper and/or other spices, along with some onion, tomato, peppers or another one of your favorite vegetables.





I like to make this with a side of hash browns (just make sure to use your own chopped potatoes, or check the hash brown packaging to ensure they are vegan. Believe it or not, many manufacturers add egg and/or milk to their hash brown mix.
The same issues occur when you make a bread purchase. I always have to check and make sure the bread is free of eggs or dairy.

Tofu Scramble and Hash Browns

Ingredients: 

  • Extra firm tofu (chopped into 1/2 inch chunks)
  • Onion diced (half large or whole small)
  • Salt
  • Pepper
  • Favorite Seasoning
  • Potatoes (diced) or vegan hash brown mix
  • Vegan bacon (chopped)
  • Organic soy butter or margarine

Add butter to frying pan and then add diced onion. Cook on medium heat till soft. Add chopped tofu. Cook on medium heat till hot and slightly brown. Add chopped vegan bacon.

At the same time, but in a different frying pan, add a tablespoon of butter or oil, and then add potatoes or hash browns. Cook on medium heat until brown, stirring frequently. Add more butter or oil as needed.

 

When the tofu mixture and hash browns are cooked, you can either mix them together and cook for an additional five minutes, or leave separate and add to your plate.

I like grits, sliced fruit and toast to round out this hearty breakfast feast.

Hint: You can personalize this recipe by adding other vegetables such as peppers, mushrooms, tomatoes and more to either your tofu or hash brown mixture. For an extra rich taste you can also add vegan cheese!
